Cowboy Meat Loaf

This is by far my favorite meat loaf recipe! It turns out great every single time!


For Loaf:

  • 2 Eggs Beaten
  • 3/4 Cup Milk
  • 2/3 Cup Italian Style Bread Crumbs
  • 1-1/2 lbs Ground Beef
  • 1/2 poblano pepper chopped
  • 1/2 large onion chopped
  • Salt/Pepper to Taste

For Sauce:

  • 1/4 Cup Catsup
  • 2 Tablespoons Brown Sugar
  • 1 Teaspoon dry mustard
  • Salt/Pepper to Taste


  • In a bowl combine Egss, Milk. Stir in bread crumbs,onions,peppers, then meat. Salt/Pepper to Taste. Mix well.
  • In a loaf pan, bake in oven at 350 Degrees for 1 to 1-1/4 hours. Inside Temp should be 160 Degrees.
  • Remove from Oven and spoon off fat.
  • Mix all sauce ingredients and add to top of loaf. Salt/Pepper to Taste.
  • Bake Loaf for another ten minutes.
