Bacon Wrapped, Apple-wood Smoked, Stuffed Pork Tenderloin (2 ways)

Ingredients
  

  • 1 1.5-2lbs Pork Tenderloin(s)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp granulated garlic
  • 1 tbsp onion powder
  • 1 tbsp. smoked paprika
  • 1 tbsp. cumin
  • 1 tbsp. brown sugar
  • 1/4 cup yellow mustard optional, for binder

Stuffing Option #1

  • 8 oz Mild Cheddar Cheese sliced

Stuffing Option #2

  • 4 Whole Granny Smith Apples Caramelized with butter and brown sugar

Instructions
 

  • Preheat smoker w/apple wood
  • Remove silver
  • Cut open, either like a book, or unroll, pound flat if necessary about 1/2 – 3/4" thick, even is what matters
  • Fill with desired filling
  • Fold/wrap close. Use toothpicks if desired.
  • Coat the outside in thin layer of mustard
  • Season with remaining ingredients
  • Wrap in bacon
  • Cook @ 250 until internal temp 140f. *Optional – half way through cooking spray with 50/50 apple cider vinegar/apple juice mix.
  • Pull and rest for 10 minutes(if you are patient enough!)
