Bacon Wrapped, Apple-wood Smoked, Stuffed Pork Tenderloin (2 ways)
Ingredients
- 1 1.5-2lbs Pork Tenderloin(s)
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp granulated garlic
- 1 tbsp onion powder
- 1 tbsp. smoked paprika
- 1 tbsp. cumin
- 1 tbsp. brown sugar
- 1/4 cup yellow mustard optional, for binder
Stuffing Option #1
- 8 oz Mild Cheddar Cheese sliced
Stuffing Option #2
- 4 Whole Granny Smith Apples Caramelized with butter and brown sugar
Instructions
- Preheat smoker w/apple wood
- Remove silver
- Cut open, either like a book, or unroll, pound flat if necessary about 1/2 – 3/4" thick, even is what matters
- Fill with desired filling
- Fold/wrap close. Use toothpicks if desired.
- Coat the outside in thin layer of mustard
- Season with remaining ingredients
- Wrap in bacon
- Cook @ 250 until internal temp 140f. *Optional – half way through cooking spray with 50/50 apple cider vinegar/apple juice mix.
- Pull and rest for 10 minutes(if you are patient enough!)
